Chili peppers have been a staple of the human diet in the Americas for almost 10,000 years. There are six domesticated species and more than 20 wild species, with hundreds of varieties and cultivars. Chiles have been used to ward off evil and tame inflammation, and they are used in every important cuisine on earth. In this class, we will make three fabulous red sauces, a meatball surprise, a house-made chili powder with a heat level you can suit to your own taste, a Mexican-Asian fusion dish and a chocolate-chili dessert.
